Our Culinary Journey
The Noble Lion’s story begins in the early eighties, when Marc Huebner was a teenager living in Brussels, Belgium. Years of traveling across Europe and dining with family in Bavaria inspired his deep love for cooking and diverse flavors. Though passionate about food, Marc didn’t step into the restaurant world until after competing on Food Network’s America’s Best Cook in 2014.
Bringing a Neighborhood Bistro to Life
After more than three years of planning and hard work, The Noble Lion opened on May 9th, 2017. Marc’s vision was a casual, welcoming eatery with a menu blending European and Midwestern dishes made from scratch. The décor reflects a quaint European bistro, creating a warm spot for the Victoria community to gather.
A Cozy Speakeasy Experience
In March 2020, The Lion’s Den speakeasy opened just before Covid closures. This intimate bar offers craft cocktails, an extensive bourbon and tequila list, and a laid-back atmosphere perfect for evenings with friends. While Marc set the vision, it’s the dedicated staff that make every visit memorable and inviting.
